Grand Hyatt Singapore previously embarked on a six-month search to explore Singapore’s best local flavours with the aim of serving it at StraitsKitchen.
“But we soon realised that the authenticity was impossible to replicate, which is why we decided to hire local veteran hawkers to helm StraitsKitchen,” says Martin Satow, Grand Hyatt Singapore’s Executive Sous Chef.
The menu highlights the very best dishes from each of SG’s four traditional groups. From the Chinese kitchen, tuck into to-die-for delicacies such as Laksa, Hainanese Chicken Rice and Steamed Whole Sustainable Fish; from the Malay kitchen, sample Otak Otak (grilled fish paste), Ayam Bakar (grilled chicken) and assorted satay; and find Roti Prata, Butter Chicken and Briyani Rice at the Indian kitchen or Ayam Buah Keluak (braised chicken in tamarind gravy made with nuts from the keluak tree) from the Peranakan kitchen.
Top it all off with local desserts such as Nyonya kuehs (pastries) from the Peranakan kitchen, chendol (sweet shaved-ice drink) and locally inspired ice-cream flavours.
But the SG influence isn’t just in StraitsKitchen’s food, it’s also visible in the 260-seater restaurant’s interior design. “There are elements of SG culture everywhere you turn,” says Chef Martin. “The ‘show’ kitchens take centre stage, since that’s where our chefs – the true stars – dish out fresh local cuisine a la minute.”
StraitsKitchen’s buffet lunch ($56 per adult, $29 per child) happens Mondays to Fridays from noon to 2:30 p.m. and 12:30 to 3 p.m. on weekends and public holidays, while its buffet dinner ($66 per adult, $36 per child) is from 6 to 10:30 p.m. daily. Both come with a free-flow selection of chilled juices, coffee and tea. In an effort to stay true to SG’s love for food at any time of the day, diners also enjoy a special deal for late-night supper ($45 per adult, $19 per child) from 9:15 to 10:30 p.m. on Sundays to Thursdays.
