The Finder‘s latest online contributor shares another delicious recipe from her Swedish-language cookbook, Sött utan vitt socker (she translated it just for us!).
Chocolate and Avocado Truffles
From Emelie: “If you ask me, truffles are an absolute must-have during Christmas! These are a bit unorthodox, since I have added avocado to them. My favorite green cream will make these cacao dreams melt in your mouth. Be sure to use ripe avocado.”
1 ripe avocado
300 g unsweetened dark chocolate
2 tbsp agave nectar
2 tbsp organic cacao
Put the soft avocado in a bowl and smash it evenly with a fork until it is completely chunk-free.
Cut the chocolate into a bowl and let it melt over a saucepan with simmering hot water.
Pour the melted chocolate, agave nectar and cacao into the avocado and blend with a fork until fully incorporated.
Put the mixture into the fridge for about 15 minutes to let it get a bit more firm.
With the help of a tablespoon, scoop the mixture into your hand in even amounts and roll them until they are evenly shaped balls.
Put the balls on a plate of cacao and cover them with the powder. Ready to serve!

About Emelie Holm
Sweet Not Sugar is the English-translated title for Emelie Holm’s new Swedish-language cookbook, Sött utan vitt socker. Living in Bangkok with her husband and three kids, she calls refined sugar “overrated.” “I started experimenting in the kitchen, just by taking out white sugars from our most beloved brownies and cheesecakes,” says Emelie, who started the first cupcake bakery in Sweden. “The result was amazing, and the outcome was my book!” As of now, this is the only place to find recipes from Emelie’s cookbook in English.
