The Moluccas Room: Indonesian cuisine with French infusions
Helmed by Indonesian-European Chef Alicia Tivey, The Moluccas Room presents ingredients not commonly found in Indonesian cuisine, reintroduces some authentic culinary aspects from the Archipelago, while evolving others. This is notable in signature dishes such as the Angus Steak rendang, a 180-gram Angus tenderloin steak perfectly grilled placed atop French beans and slathered with Javanese-style rendang sauce. Also try the confit sakura ayam tuturaga - sakura chicken slow cooked in its own fat mixed with a fragrant West Sulawesi spice blend and served with roasted baby new potatoes. For dessert, sink your sweet tooth into the Sri Kaya crème brûlée - creamy coconut custard flavoured with Pandan, topped with a caramelised crust and served with homemade gula melaka ice cream.
