Why salmon is so good for you

 

The health benefits of eating fish on a regular basis – particularly oily fish – are becoming increasingly clear. Salmon is especially nutritious due to the high levels of natural oils distributed through the flesh and King salmon has the highest natural oil content of all. A rich source of healthy fats, a 150-gram portion of King salmon provides the complete daily requirement of Omega-3 – protecting you against heart disease and certain cancers, alleviating arthritic pain and boosting the immune system.
         
Salmon also provides essential vitamins and minerals and is an excellent source of protein, with 20 grams of protein in every 100 grams. It’s also simple, tasty and convenient to prepare and is easily digested. Try this delicious recipe!

Salmon with orange and thyme

Ingredients (Serves 6)

  • ¼ cup of orange juice

  • 1 teaspoon of orange zest

  • 2 teaspoons of honey

  • 2 teaspoons of fresh thyme sprigs

  • 1 side of salmon (filleted)

  • Chopped fresh herbs for garnish

Method

1. Combine orange juice, zest, honey and thyme sprigs in a small bowl. Place the fillet, skin side down, in a large baking dish lined with foil and pour over the orange and honey mixture.

2. Cook in a preheated oven at 200°C for 15 minutes, or until the fillet is just cooked through. Place under a grill for a further two to three minutes, until the salmon starts to brown.

3. Place the salmon on a serving platter and garnish with fresh herbs. Serve with green beans and baby potatoes garnished with fresh mint.
